Ever since a few months after release, even the best theorists have tended to take most of the stuff involving Flowey at more or less face value and haven't really questioned it much - which isn't much of a surprise, since most resources have been directed toward Chara, Sans, and Gaster instead. I've actually been working on this huge theory project involving Flowey over the past couple of years, and one of the main themes of this project is that the whole web of lore around Flowey is much more complicated and mysterious than most people think it is. After absorbing the human SOULs, Flowey transforms into a grotesque, flower-shaped hybrid of plant tissue, human. He serves as the final boss of that route if the protagonist has not defeated him before since the last True Reset or Genocide Route. So what exactly is going on with Flowey is more of a mystery than people realize. Photoshop Flowey (also known as Omega Flowey by fans), is the entity created when Flowey absorbs the six human SOULs at the end of a Neutral Route. The book in the Snowdin library does bring up the idea that the soul is what lets you feel love and compassion, but it then dismisses that idea as being nothing but folklore, since the true nature of souls is unknown and human souls clearly don't need love or compassion to exist. The whole idea of Asriel being "soulless" as Flowey is something that doesn't really make a whole lot of sense if taken literally - throughout the majority of the game, it's made pretty clear that the soul *is* the person, especially in Asriel's boss fight (where you fight the "Lost Souls"), so it isn't quite clear what it would even mean for Flowey to be "soulless" in a literal sense, at least not if he's meant to be a straightforward reincarnation of Asriel as most people assume. Yeah, this was actually a fairly common interpretation around the game's release in 2015, you can see versions of it here and here.
